Harvest Time

This is a photo of a few of the pumpkins & squashes that I harvested out of the garden earlier this fall. I thought it was interesting how the sunlight was hitting them one evening.

For some reason all these squashes were fairly small. The ones I harvested a few weeks later were huge (of course they were growing out of my compost pile).

Can’t wait to eat these, hmm what will it be? Butternut squash soup, roasted butternuts, pumpkin pie or bread? Any suggestions or great recipes out there?

    A few weeks ago I made a pasta sauce with butternut squash, caramelized shallots, sage, and cream. It was so surprisingly good, I actually posted about it. But then, I’m a sucker for anything with pasta.

    That sounds good Kristin. I’m thinking about making some butternut squash ravioli with sage brown butter, there’s just something about sage & squash. I’m also a sucker for anything with pasta.

    They look great! At least they are ripe. I only had two ripen before they all froze on the vine.

    Squash Soup can be made quite easily by mixing coconut milk, pureed squash and seasonings of your choice. We like curry powder.

    I would go with the soup. I have heard great things about squash soups. I’m sure they would be wonderful comfort food on freezing days.

    I am a HUGE fan of squash soup. I think I’m going to make a few different kinds this winter!
