Hot Dog Relish

This is a sweet version that is terrific on grilled Cheddar cheese
sandwiches --

2 C distilled white vinegar
2 C sugar
4.5 t salt
1.5 t freshly ground black pepper
1.5 t ground cinnamon
3/4 t ground cloves
9 C finely chopped zucchini.
4 small onions, finely chopped.
2 apples, peeled and finely chopped.
2 green tomatoes, finely chopped.

1. In a large noncreative kettle, combine the vinegar, sugar, salt, pepper, cinnamon, and cloves.  Bring to a boil.  Add the zucchini, onions, apples, and green tomatoes.  Simmer uncovered, stirring frequently, until thick, about 30 minutes.

2. Pack the relish into four clean, hot 1-pint jars, leaving 1/2 inch of headroom.  Using a plastic or wooden spatula, remove air bubbles.  Wipe the rim with a clean cloth and seal.

3. Process in a boiling-water bath according to your altitude.

4. Let cool undisturbed for 12 hours.  Store in a cool, dry place.  Allow 6 weeks for the full flavors to develop.</description>

		<description>I wish I had been home so I could take part in this glorious holiday/day  :-) What fun it is.  My mother found a huge zucchini on her desk at work on the 8th, and while she suspects which coworker was celebrating the day, the donor managed the deed unseen.  It was delicious.

On the other hand, I&#039;ve been giving away cucumber (Straight Eight) like crazy.  I have 10 plants that are yielding a lot more than we can consume.  Maybe I should start &quot;Sneak Some Cucumber onto Your Neighbor&#039;s Porch Day&quot;.  :o)

I was at my neighbor&#039;s house last night begging for any left-over zucchini, so I would have enough to make relish.  Our zucchini plants did not produce enough this year, and I am so disappointed.  I still want to make zucchini marmalade, zucchini chutney, zucchini lasagna...and the list goes on.
