Never Enough Stuffing

We enjoyed a wonderful Thanksgiving meal with our friends Wednesday. The main dinner was Thursday with my family. This included the local pastured turkey from the farm, sweet potatoes from my mom’s garden, pumpkin pie made with Cinderella pumpkin, local cream and eggs, local corn, beans, potatoes and rolls made with local butter.

My favorite part of Thanksgiving is the stuffing, with lots of onions and celery (from my garden) and lots and lots of sage. This year I made a batch with homemade bread and a batch with store bought crumbs. I make the broth to moisten it with the turkey neck, gizzard and heart, along with some celery, onions, sage, salt and pepper. (I forgot to mention that this year I added diced apples to the stuffing and some cider along with the turkey broth, next year I think I’ll add some walnuts).

Stuffing is my favorite part of Thanksgiving, I could get rid of all other dishes. And none of that stuff from inside the bird, I like mine baked in a casserole dish so it’s moist & gooey on the inside and crispy and caramelized on the outside. I quickly grow tired of all holiday leftovers except stuffing, which seems like there isn’t ever enough.

    i agree, totally. fried with butter, even a sneaky bit out of the dish in the fridge. there is a close second: leftover mashed potatoes also fried in butter with two over medium eggs. aahh…

    The stuffing is one of my favorites. My mom makes a great potato dish with Yukon gold potatoes, sweet potatoes, and cheese on top. Mmmm. I’m not originally from the south and my wife and I have had “discussions” on the state of stuffing. I call it stuffing and around here they call it dressing!

    i’m with you on the stuffing! and of course your’s looks awesome! i made the stuffing for our family, but it wasn’t quite as homemade as your’s was… :) but it was still good! (stuffing with mayo, cheese, mushrooms, celery, & onion!)

      I’ve never heard of adding mayo, that’s very interesting. The mushrooms sounds good as well. I forgot to mention that I put apples in ours this year and some cider along with the turkey stock. Next year I may add walnuts as well.

    Ours is stuffing also. Second runner up is this simple salad:
    One head of green cabbage, chopped in bite size pieces
    One pound or so of salad shrimp (not canned)
    Mayo, salt and pepper to taste.

    Always a big hit at any get together.

    HAHA – I made stuffing this year, a sausage mushroom stuffing that was quite good – and not in the bird either. We made a huge dish of it, and it was the first thing to run out – we’re considering making more, since we still have turkey! We’ll need to make some more gravy somehow though… We were very happy to have served our family a few things from our garden this year – and hopefully even more next year.
