Friday Favorites: Stuffed

As most of you know, yesterday was Thanksgiving here in the U.S. Mr Chiots and I celebrated as most folks, with a big turkey meal with all the trimmings. I’m not a big fan of turkey, or most poultry for that matter, so Thanksgiving meals aren’t that exciting for me. I am however a HUGE fan of stuffing, or dressing.

I make mine with homemade bread, usually a mix of whole grain, white and sourdough. It’s easier if I have saved stale bread for the last couple months, but Mr Chiots and I are bread lovers, so we rarely have bread go stale on us. I ended up baking a few batches of bread for our stuffing (at least I was able to put half of the loaves in the freezer for Mr Chiots to take hunting).

I like my stuffing with lots of celery, onions and sage. This year I harvested fresh sage and celery from the garden for my stuffing. My sage was planting just for this meal, and this was one of the celery’s main purposes as well (along with my tomato soup).

I really like my stuffing to be more like bread pudding, really soft and wet on the inside and crispy on the top and the edges, and smothered with good gravy on the my plate. I use turkey or chicken stock as the liquid and sometimes a little cider. I ate my fill of stuffing Wednesday and yesterday and have a big container in the fridge to feast on for the rest of the week.

    I’m not a fan of stuffing but if it was made how you describe I’d like it whole lot more!
    A traditional sunday roast with chicken when I was growing up always had onion sauce with it (as does the Turkey on Christmas day at mums). I don’t eat meat now but I love it so much I still make it to go with my veg (onion sauteed in butter + milk + salt + cornflour to thicken it)

    My favorite side dish would be apple pie. Oh, wait, that’s not a side dish, aaaaah, I guess it would have to be the sweet potatoes with the little melted marshmallows on top. Anyway, I went to a friend’s house and had to much food with to much desert. I figure it only happens once a year so enjoy and recover. I like dressing smothered in giblet gravy too.

    I like your photos from yesterday! I had the camera sitting out – didn’t take one photo. My favorite side dishes would be stuffing and mashed potatoes with gravy. I made the bread for the stuffing this year and it turned out great. I will play a bit more with the seasonings next year. Your celery looks great. I might have to add that to the garden list. I am happy that I won’t have to spend much time in the kitchen cooking for the next few days – left-overs will make everyone happy, including me. Sincerely, Emily

    The stuffing is my most favorite part of the Thanksgiving meal…we always use my grandmother’s recipe…and I love it. And like you, I take a piece of turkey out of obligation…I am all about the sides! I have to say I am so inspired by the fact that you grew celery for your stuffing! I will consider that when I work up my nerve to plant a garden year round. You mentioned celery for your tomato soup as well…do you have a good recipe you might share? I’ve been trying to emulate one that I had in Belgium over the summer and can’t seem to get it right. Maybe celery is the key!

    Like you I am a stuffing lover. Stale bread, stale cornbread, sage, celery and onion, sausage, walnuts. Yes, moist on the inside and crusty outside.
    And pumpkin pie. Oh my goodness.

    Oh yes, my favourite part of Thanksgiving is the stuffing. We celebeate Thanksgiving in October (here in Canada) but reading your description of your meal really made me want to make some more stuffing. Hmmm…maybe this weekend with a roasted chicken. I could eat left over stuffing for weeks. Sadly, it never lasts beyond a day or so.

    I like all the sides, I rarely even eat the turkey. My favorite dish, though, is my dad’s eggplant lasagna, its just eggplant, spinach and lots and lots of cheese. It makes me very happy :) actually Thanksgiving makes me very happy :)
