Sweet Rewards

Yesterday morning I finished up our first batch of maple syrup for the 2012 season. A few days after we tapped the trees, the weather turned cold once again and the sap quit flowing. Usually I wait until I’ll have a gallon or so to finish, but I finished off the 12 gallons of sap we collected down to one quart of syrup. Instead of canning it we decided to enjoy it.

What better way to enjoy syrup than drizzled over sourdough pancakes (recipe at Eat Outside the Bag) with some homemade sausage. When it comes to enjoying maple syrup, my personal favorite is over french toast, but Mr Chiots is a pancake fan so I made him some pancakes. Since we follow the Nourishing Traditions way to eating our pancakes are always sourdough and soaked overnight.

I’m a bit odd in that I don’t really like syrup on my pancakes but I love it on my sausage. The sausage we eat here at Chiot’s Run is always mixed up the night before with herbs from the garden, you can find my Savory Breakfast Sausage recipe at Eat Outside the Bag. Since we purchased a half a hog this year we’ve been having sausage often for breakfast and we’re really loving it.

Syrup on your sausage – yay or nay? What about on your pancakes?

    I have only eaten waffles once within about 4 years and pancakes about the same.. but I’d much rather have syrup with my pancakes/waffles than my sausage.

    I don’t eat sausage, but syrup on French toast is dee-vine!

    I’d love to know more about the process of preparing the maple syrup. Any chance you’ll do a tutorial?

    When eating pancakes, waffles or french toast the sausage or bacon always gets a dip in the syrup.

    I like it fine on my pancakes, though in small amounts (and only the real stuff), but love it on my sausages!

    According to Nourishing Traditions’ soaking method… do you do the soaking at room temp or in the fridge??? I never was quite sure though i do soak my beans at room temp, I was not sure if it is good for grains.

      Room temp, they sit out on the counter overnight or for 24 hours.

    I love maple syrup, but then I also haven’t really eaten that sweet in months. I came to appreciate the sausage/pancake/maple syrup combo here – Germans don’t eat pancakes that way, normally. :)

    I approve of syrup application anywhere it deems right. Hee hee!
    But I do not like to douse my food wtih it – just a bit on the side and I dip as I go. Now I will have to take a gander at this sourdough pancake recipe – I’m a ‘pancake fiend’ as described by friends and family.
    [I’m with you too though, sometimes I crave a good piece of french toast.]
    With the odd ways of applying syrup – I actually like it mixed into corned beef & hash! It’s the same as sausage though, adding sweet to something salty. Now I’m really hungry…

    Oh YUM! Somewhere in elementary school I started eating my pancakes with peanut butter and jam on them. Still crave them that way at times. Now I prefer the maple syrup on the pancakes. Sausage – rather eat that savory and spicy along, no syrup.

      I like to make peanut butter and jelly sandwiches out of leftover french toast.

      And I’ll happily pour syrup over my whole breakfast plate. Bacon or sausage, eggs, hashbrowns, and of course the pancakes or french toast too. About the only thing I don’t want syrup on is the toast (that needs strawberry jam).

    Oh Yes!! Love syrup on my sausage. My family thinks I’m odd…oh well. I love all sorts of strange food combinations…sweet and savory, YUM!

    I’ll skip the sausage, thanks, and stick to the pancakes with the syrup. But only because I don’t like sausage much.

    What I really prefer is my maple syrup over vanilla ice cream. Except even I can’t justify that as a breakfast food.

    We’re doing our first boiling tomorrow. About time. I ran out of syrup a week ago.

    I like syrup on lots of things! Sausage, bacon, pancakes, mush, oatmeal, grits, heck, I’ve even been known to put a little in my coffee from time to time as a sweet treat. I usually take my coffee black, but sometimes, you just need a sweet pick-me-up. :-)

    Hi Susy, I just made your sausage and it was delicious! And I have always been “drench your pancakes with syrup” kind of girl but I skipped the pancakes and gave the patties a liberal dose this time. SO YUMMY. You are the greatest!
