Friday Favorite: Blueberries

It’s wild blueberry season here in Maine and we’ve been enjoying them. I ordered 40lbs for the freezer and picked up 10lbs at the farmers market last week.

We’ve been enjoying them in our kefir daily, which is a great way to use them and maximize their healthfulness. Last week I made wild blueberry bread pudding and I’m trying to decide what to make with the remainder of the fresh ones I have.

Do you have any great blueberry recipe to recommend?

    Blueberry crisp is my favorite! No particular recipe, I just throw it together. It’s great if you add a little cardamom though! And ginger ice cream is great on it.

    Blueberry pie. And jam, blueberry-lime jam. Also blueberry muffins and leftovers can be stored in the freezer.

    Blueberry bread and pie are my favorites! My blueberry jam was an epic fail so I boiled it down and made blueberry sauce/syrup to use on pancakes and ice cream

    blueberry ice cream………..4 cups frozen blueberries, 4 well ripe partially frozen bananas cut into quarter inch ‘coins’, 2 tablespoon lime/organge juice. blend all ingredients in a food processor. enjoy!! if you like soft ice cream eat right away, or put in freezer for a firmer finish. other berries can be combined if you so desire.

    Blueberries are wonderful! No seeds to pick out, no peels, no slicing. Just toss them in your pancakes or muffins and you’re ready to eat!

    For fresh blueberries, I can’t think of a recipe for them that I enjoy better than just eating them by the handful. For crisps and such, I do find that a bit (or a bit more) of cinnamon really adds to them. I love those flavors together.

    I love adding a handful of the frozen ones to a bowl of granola and milk, along with a handful of walnuts if I’m looking for something extra filling.

    Blueberries are my younger son’s favorite fruit to eat fresh, so I never have enough to bake with really. But sometimes my husband puts them in our buckwheat pancakes.

    I ate as many blueberries off the bushes as I gathered. Earlier this summer I made nectarine blueberry lime jam, and it was the best I’ve ever made.

    Blueberry Lemon scones are really nice. I have hard time baking/cooking fresh blueberries, that’s what the frozen ones are for. Fresh ones are just fine eaten in a wonderful fruit salad or on top of granola and yogurt in the morning! YUM!

    Susy, you lucky people. Blueberries grow so wild in Maine no one really has to grow them in their garden. Here in Nebraska the wild fruit tree would be the Mulberry. Every year I’m going to forage the wild Mulberry and make jam, jelly, wine, etc. but alas by the end of June the garden beckons and the wild Mulberry becomes bird droppings along the fence lines.
