Friday Favorite: Taza Chocolate
I’m not a chocoholic, but I do like a bit of good chocolate every now and then. Milk chocolate is not my thing, I find it much too sweet. Dark chocolate is more my speed, the darker the better. Recently, I’ve fallen in love with Taza chocolate. It’s stone ground and made without emulsifiers, so there’s no soy lecithin or other weirdness involved. The texture is different that regular chocolate, but I like it.
It’s not cheap chocolate, but it’s good quality and it’s tastes great. I don’t buy it that often, but when I do I enjoy every last bit of it. One of the things I like about buying really great chocolate is that a tiny square is enough, no need to eat the entire bar, which means a bar or round will last me a few weeks. Taza comes with different flavor additions: ginger, chipotle, coffee, cinnamon and salt & pepper (which is my favorite).

Am not a chocolate lover. I grew with tons of cocoa trees all over the place, and we made cocoa sticks/balls which we used to make tea, in cakes and would eat as a snack with a bit of sugar.
The cocoa pods were picked, cut opened, dried then ground into a paste. Then small balls or sticks………4 to5 inches long were made and left to dry.. These we used in baking or making cocoa tea………as is called in the Caribbean.
I no longer make cocoa tea, but add the cocoa bean to my smoothies.

I am not a chocolate person. Probably because all the good chocolate is too expensive and I certainly can’t afford to spend money on that. However in the past I have had Wilbur Chocolate and it is really tasty and not too sweet. Another place was in Canada right over the border of Maine. Absolutely yummy – no weird waxy aftertaste.

I’m not a huge chocolate fan either, but when I do buy it I don’t have a favorite brand but always buy organic, fair trade chocolate. As dark as I can get it, and preferably with candied ginger in it…. Lately we’ve been making a chocolate mousse with soft tofu instead of cream (my husband is a real mousse fan!), and been purchasing chocolate bars for that.

Oh where to start… There is always a bar of Green and Black in the house. Theo makes a good chili bar. There is a chocolate shop not too far from here and they sell high quality chocolate in bulk. I’ve tried some really amazing single origin, fair trade chocolate from Equador, Venezuela, etc.

I’ve always love Godiva but in the last few years it seems to have changed somewhat. Ganong’s in St. Stephen NB is rather good too.

Taza’s cinnamon is my favourite. makes a wonderful hot chocolate on a cold and frosty winter morning. But I love the Seattle brands Theo and Dilettante, although the latter I don’t eat but once or twice a year when I make chocolate ganache for a cake, because it’s made conventionally. Theo has a delectable orange chocolate bar.
Our local ice creamery and candy shoppe has delicious chocolates made by a chocolatier in Oregon. They have many different flavours, but I like the lavender and lemon. So tasty because they are made with responsibly grown ingredients. Sometimes it hard to choose between a scoop of caramel chocolate ice cream or one of those chocolates, so we’ll get both and walk around the block a couple times while we eat. :)

My husband doesn’t like dark chocolate however I really do—it’s my little trick so he doesn’t eat my chocolate. :) I too like the stronger dark chocolates. I look for the highest amount of cacao as possible. I don’t buy the good stuff often, mostly as treats and then I savor it for weeks.

If I eat milk chocolate, it’s usually with peanut butter. Mostly, I like a little salt with my chocolate, I guess.

I really have never met a dark chocolate….That I did not like:) I also have a hard time with milk chocolate…blech….However my newest passion is chocolate covered coffee beans…..swoon…..Two of my favoritest things in one little package……

I love chocolate and so does my husband. I prefer a fair trade chocolate – I typically end up with the endangered species bars because of their price. I usually opt for a chocolate bar with sea salt. Yum!
