MMMMMM – Guacamole

Last Saturday I talked about the box of avocados we purchased from a small farm in California.  Since we have 18 avocados to eat we’ll be eating them for every meal.  The first one was ripe yesterday, perfect for Cinco de Mayo! I made guacamole and we had it in our omelets.

My guacamole recipe is simple: 1 mashed avocado, 1 diced jalapeño (right now I’m using fire roasted pickled jalapeños I made this summer, here’s my recipe for those), 1 Tablespoon of Greek yogurt (this adds probiotics and helps keep the guac from turning brown), juice of one half lime, salt and pepper to taste. I also often add a few teaspoons of olive oil to help the guac maintain it’s green color and stop oxidation, it also adds to the smooth texture.

Mr Chiots used to dislike avocados very much, he wouldn’t eat them at all. Whenever we’d eat at Chipotle I’d order guacamole. He’d try a little each time and soon enough he was ordering his own little tub of it for his burrito. Now he’ll polish off a half an avocado for breakfast.

Last night for dinner we had fajitas with guacamole. This morning we’ll probably have sliced guacamole with our eggs. I’m trying to freeze some guacamole to see how it thaws. If that works I’ll have another box of avocados on the way to stock the freezer.

    Since your last avocado post, that is all I have been eating. Sliced on a piece of bread, cut in half with a pinch of salt and a spoon for scooping, cubed and tossed with lentils, onions, and a squeeze of lime. The list goes on and on. I have two more left and I am trying to hold off eating them until tomorrow – it can be my lunch at work.

    I eat an avocado plain almost every single day. No need to doctor it up in any way to make me happy.

    I have heard that freezing avocado puree works very well. I am not sure I would make it into guacamole before freezing. Just puree, and maybe add your acidifier to help keep it green.

    I keep pulling out the chocolate avocado pudding recipe that I want to try then chicken out. Have you seen any version of that? They say it is really really good.

    Oh and by the way, we hope to get an Anatolian shepherd soon. Our chickens are being terrorized and eaten by a local fox. Right now we are having to keep all but the guineas under lock and key during the day which makes me sad. They have a good sized run but they are used to total free ranging. I saw the fox come right in yesterday, bold as can be and try for a free chicken dinner. Only my yelling and running at it sent it on its way

      Good luck with the Anatolian, she has done wonders protecting our flock. The fox can be quite brazen, I have had them stop and just stare at me without running away. Our guineas seem to do very well at protecting themselves, they wander around on 6-7 hours.

    I love them just sliced with freshly cracked black pepper and salt on toast or a cracker. Avocado cucumber sandwiches bring back childhood memories. In Peru, we grew up eating them mashed with a sprinkle of sugar. Do they also eat them like this in Colombia?

    Susy, I really don’t think of Avocados in my bachelor diet. I like guacamole but I don’t make it myself. It would be something that only I would eat. The grandson and daughter wouldn’t touch it. I imagine that Avocados diced and in a salad would be good. I’ll have to see if the stores here have any good ones for sale.

    I love them sliced on a fajita, or in sushi rolls, yum! Once in a while my MIL mails us a giant avocado from a neighbor’s house in FL, then we make a giant bowl of guacamole :)

    NW edible life just had a post on freezing guacamole, I had no idea you could do that, but her method looked good.

    Two of my favorite ways to eat avocado:

    1. Avocado, Tomato and Mozzarella Salad. Too bad it is too early for it, store bought tomatoes at this time of year are not too nice yet.
    2. Sliced Avocado on Rye Sourdough bread. A little Olive Oil drizzled over lightly toasted bread, slices of Avocado, Salt and Pepper to taste and then a little bit of Balsamic Vinegar drizzled over…. seriously decadent and yummy.

    Any way is my favorite way:) Normally I eat them with salt..pepper and lemon squeezed on top….or as their own little bowl filled with black beans…cilantro…onion….also love them in a green smoothie..with spinach….nettles…blueberries…yogurt and honey.

    Love ’em in salads, sandwiches, or as a spread. I even have a recipe for chocolate pudding made from this amazing fruit. It’s out of this world, and you can’t tell it’s good for you! Enjoy your guac. Looks like a delicious meal.

    I like your simple recipe. I add cayenne pepper usually, and sometimes even a tiny bit of apple cider vinegar. Enhances the flavors, I think!
