Baby Bells

This year I grew baby bell peppers from seed thinking they’d ripen before the big one, I was correct in my line of thought. When I checked on the garden after being away for 10 days, there were beautiful red baby bell peppers.

Look how cute they are, I’m thinking I might use them to make stuffed peppers because I always though big green peppers were way to big when stuffed. I have to admit, I didn’t used to be a pepper fan. The problem is more peppers from the store, I think it’s actually the preservative they put on them. When I eat store bought peppers I get indigestion, not so with homegrown ones. Now we eat them in the fall when they’re in season.

    Peppers are probably the easiest thing to grow here as they don’t need much water and don’t mind temperatures over 100. I have more than I know what to do with. We dry & smoke the poblanos and jalapenos to get anchos & chipotle but it’s more than we could ever use. My favorite pepper is probably serrano.

    Your baby bells are so cute! My bell peppers produced really well this year, though the plants are winding down now. I diced at least 50 of them for the freezer, we use them in cooking a lot. I’ve stuffed some of them, too, and we like them sliced into strips in a salad. This was the first veggie that I’ve saved seed from (last year) and they grew really well.

    Susy, bell peppers usually produce well here in Nebraska but this year not so much. I got enough to use fresh but none to freeze. I use them fresh in salads and mostly sautéed in scrambled eggs or omelets. Mostly I grow them to give away. I don’t really grow any other kind of pepper than green bell peppers. That’s what people want the most. The best give away produce is of course tomatoes and second would be green beans. I couldn’t give them away fast enough last year. I didn’t know so many folks like fresh green beans. Any way gardens are done here and I’m starting the cleanup process today.

    I can never get my bell peppers to ripen well and I only like them red, not green so I stopped growing them a couple of years ago. It never occurred to me to try the baby bells for better ripening. Thanks for sharing your good idea! We love peppers sauteed over chicken, in a quesadilla, fresh in a salad, made into pepper jelly . . .
