Summer Saved

I don’t do much canning, but I do put up a few jars of tomatoes every summer. There’s nothing quite like cracking open a jar of crushed tomatoes in the middle of a snowstorm. The smell brings you right back to summer.

Last night I worked late into the night getting 8 quarts and 4 pints of crushed tomatoes put up. Earlier this week I made 20 pints of tomato soup. I’m hoping to at least double this if the tomatoes hold on and the weather continues to be nice. I’m keeping my fingers crossed for no late blight and sunny days.

Do you jar up tomatoes? What’s your favorite recipe to use them in during the winter?

    It amazes me the energy you have to grow almost all of your own food, raising animals, etc. You must sleep really well at night after a day of hard work. Keep it up. I’m way past your youthful age. If I were younger (and didn’t have a mostly shaded yard) I would try doing some of what you do. I admire you and your husband’s drive to live organically.

    Most of my tomatoes end up in the freezer, rather than jarred. My two staples are cherry tomatoes cooked with lots of garlic and olive oil in a low oven until they burst, and a simple tomato-roasted vegetable sauce. Either one pulled out in the middle of winter is a little bit of heaven :-)

    I do love to have canned tomatoes on hand through the winter months. They can be used in so many ways. My husband also makes a few batches of spaghetti sauce that we freeze. It is a good base for lasagna, spaghetti, baked ziti etc. Every other year I make a batch of tomato jam from Food in Jars. I love to eat it with a toasted cheese sandwich or else dollop some into stew in the slow cooker.

    I’ve never learned how to can, so I freeze everything. I have been freezing my tomatoes whole and I use them in chili and soup. I’ve just today made roasted tomatoes and now I’m hooked. I’m hoping to teach myself canning next summer.
