Never Enough Stuffing

November 28th, 2009

We enjoyed a wonderful Thanksgiving meal with our friends Wednesday. The main dinner was Thursday with my family. This included the local pastured turkey from the farm, sweet potatoes from my mom’s garden, pumpkin pie made with Cinderella pumpkin, local cream and eggs, local corn, beans, potatoes and rolls made with local butter.

My favorite part of Thanksgiving is the stuffing, with lots of onions and celery (from my garden) and lots and lots of sage. This year I made a batch with homemade bread and a batch with store bought crumbs. I make the broth to moisten it with the turkey neck, gizzard and heart, along with some celery, onions, sage, salt and pepper. (I forgot to mention that this year I added diced apples to the stuffing and some cider along with the turkey broth, next year I think I’ll add some walnuts).
stuffing
Stuffing is my favorite part of Thanksgiving, I could get rid of all other dishes. And none of that stuff from inside the bird, I like mine baked in a casserole dish so it’s moist & gooey on the inside and crispy and caramelized on the outside. I quickly grow tired of all holiday leftovers except stuffing, which seems like there isn’t ever enough.

What’s your favorite Thanksgiving dish?

Behind the Scenes

November 20th, 2009

I hate to have my picture taken and I’m not a fan of seeing pictures of myself either. I’m much more comfortable being the one behind the camera. I’ve been sorting through my photos and I found some Mr Chiots has taken of me. As much as I hate to see photos of myself, I figured you might like to see a few of the person that’s usually behind the scenes here at Chiot’s Run.

Quote of the Day: Cree Indian Saying

November 16th, 2009

“Only when the last tree has died and the last river
been poisoned and the last fish been caught
will we realize that we cannot eat money”

Cree Indian, 1909

Mr Chiots and I are big fans of camping and hiking, it’s our vacation of choice. We just watched the PBS National Park special and we really enjoyed it. I visited most of the National Parks with my family growing up but Mr Chiots hasn’t been to very many.
Hikers
We’re hoping to go on a long vacation next year to add a few to his list. He’s particularly excited to visit Mt Rushmore and I can’t wait to go back to Bryce Canyon and Zion National Park. The place we want to visit most is Alaska!

We’re thankful for all of those that came before us that saw it fit to set aside the parks and continue to save them for all of us to enjoy. We want to see as many as we can and enjoy the beauty of this great country we live in!

Have you ever visited any National Parks? If so which is your favorite?

**All of these photos were taken at the Great Smoky Mountain National Park during 2 different trips (one with our very best friends, hence 4 sets of hiking boots).

2010 Calendars

November 12th, 2009

We celebrate a simple Christmas with my family. We don’t spend much money and we try to make homemade gifts or use our talents to make gifts for others. This year I decided to make calendars for everyone. It’s something useful and it won’t clutter up the house, use it for a year and recycle it. I’ve been sorting through all of my photos picking out the best ones for each month and I think I finally settled on a design (it sure was hard narrowing down the photos). I’m going to get them printed up at Lulu so they’re really nice, and since I’m getting more than 10 printed up I can get them for a pretty good deal!

Here are some of the photos I chose to go inside. I tried to choose photos that depicted the month they corresponded to. Some months have more than one picture.

I’ll make them public at Lulu in case anyone wants to buy one (when I finalize the design), I’ll also be giving one away in a contest when I get them.

Do you make any of the gifts you give out during the holidays?

Sunny Days

November 10th, 2009

We’ve been having wonderful weather recently. It all started last Friday with a nice sunny day and temps climbing into the 50’s. I was at my mom & dad’s house and my sister came over with her clan. We had a blast making homemade pizza and ice cream and we spent the afternoon playing outside.

I enjoy sunny days, particularly this time of the year. I think that kids really know how to make the most of them. I generally spend them working and finishing up garden chores, they’re happy making the most of them by playing. Mr Chiot’s and I did spend some time on Saturday morning enjoying the weather by hiking, but I spent the afternoon working outside.

What’s your favorite sunny fall day activity?
