A Little Peace of Mind
There’s just something wonderful about waking up in the morning and seeing this on your counter. This is what I saw Wednesday morning when I got up and went into the kitchen.
On Tuesday I canned: 5 quarts of tomato soup, 5 pints of tomato soup, 4 pints of pickles, 3 quarts of sauerkraut, 3 pints of sauerkraut.

My countertop. Right now, lots of new flours for experimentation – I’ve had to have a big chance in my life that I’ll explain this weekend on my blog, but it has been stressful. There are also boxes of peaches on one side, their fate yet unknown… perhaps dehydrating. I also have more basil waiting for pesto… busy weekend it will be. You are way ahead of the game!

I wish had boxes of peaches on my counter. The peach blossoms were frozen off with an early spring freeze we had, so there weren’t very many peaches. I got a few, but not near enough.

Well if I’m honest I’d say dirty dishes, old eggshells in a container (for the compost), a trap for the fruit flies, and the mail that needs to be gone through. LOL of course I also have tomatoes, tomatillos, onions and earlier this morning I had some cayennes that needed to be added to the ristra, but I did that chore already. I also have some containers of seed sitting around drying before they get put away. My dining room table is covered in plates with tomato seeds all labeled and drying, large bowls of dried beans, and some containers of washed canning jars. All the jam and pickles I made this year so far are in the pantry already.

My countertop is much like Daphne’s at the moment but minus the tomato seed saving. My peace of mind is currently from opening the pantry door and gazing upon the shelves of canned items and the freezer that is filling fast.

My counter…lets see- dirty dishes (most likely), ripening tomatoes, 10 quarts of tomato sauce, 2 pints of tomato sauce, 6 pints of salsa that need moved to the pantry this evening.

Tomatos are next on my list now that I have enough tomato soup in the pantry. I usually can crushed or chunked tomatoes and make all my sauces in the winter or when I need them. I already did some peach salsa.

I just removed several quarts of beans and replaced it with a HUGE box of beans that need to snapped and canned – can you guess what I will be doing after work today? ; )

6 loaves of fresh cracked wheat bread, a large bunch of fresh onions that I didn’t get all the dirt off of, two pumpkins, a basket of tomatoes…then there are the dishes,matchbox cars,chalkboard paint, and the camera, but I’m thinking that isn’t what you had in mind!
Your photo makes me have the urge to can all these…well not the camera…great job! Kim

If I’d woken up to that sight, I’d have jumped for joy that the canning fairies had visited my kitchen in the night!
What a great accomplishment!
Hmmm, trying to remember what’s on my kitchen counters right now (I’m at work, 6 miles from home). For sure: the small goldfish aquarium, a fishbowl with two newly acquired frogs, and a plate rack which holds plates AND rocks, old batteries, seed packets. Other counter holds an old hand-cranked coffee grinder which is holding up expired coupons and school handouts.
I think now that I’d better go clean off those kitchen counters when I return home! What a clutter.

That’s to funny, if there were only such a think as canning fairies. We could leave all the produce on the counter and wake up to perfectly canned fruits & veggies.

I am just finishing processing the 8 lbs of wild blackberries I picked last night after work.2 Pints are going to my Aunt, 1 big bowls worth for fresh eating, and I am freezing all the rest for winter cobblers. Oh, and there is one immature Delicata squash sitting on the counter that the deer pulled off the plant when she was munching leaves last night. Darn him or her!

I’m making red wine vinegar and ginger beer, both are sitting on the bench top. I’m also ripening a big bowl of tomatoes. I love the look of your bench, nice work!
