Cooking Over the Fire

Mr Chiots and enjoy cooking this over the fire. It’s fun and relaxing, not to mention the food is great and it doesn’t heat up the house. Earlier this week we roasted a chicken on the fire out back. We BBQed it, shredded it and enjoyed it on some freshly baked sourdough bread with some homemade mozzarella cheese. Now that’s a delicious summery meal!

We find ourselves using the fire in any way we can, roasting peppers for canning as well as boiling down our maple syrup in the spring. We’re lucky that we live in an area where open fires are allowed, I know many towns have rule against them.

    Looks great. Love the homemade grill on the cinder blocks. You know, Susy, I used to think that I was good at—even a little crazy with—making things from scratch, but reading your blog makes it seem like I am barely “scratching” the surface! :) Homemade mozzarella??? Awesome. You should release a recipe book of all the stuff you guys make from scratch (I know, you kind of do here and on other blogs… but just compile them all, Lulu it, and sell millions on Amazon!) :-)

    That chicken is making my mouth water! And homemade mozzarella? Sigh. I haven’t ventured into the cheese making realm yet. But, I love cooking over an open fire, too. I often slice veggies in half and roast them over the fire right alongside the meat. Summer squash is my favorite done this way. Divine! : ) Melissa

    We grill of course, but not an open fire with wood, unless we are camping. Our neighbors have a wood fire going often and the other day I was weeding the perennials around the pine trees and I could smell their fire, it reminded me of camping and made me so happy.

    I haven’t done that for a while. Maybe since my last camping trip (which has been way too long!). We grill often but not over a regular fire.

    Nope…..no rules…but we live in the country……I had to laugh upon seeing your set up…..we cook like that here……our neighbors have state of the art grilling gear…..and are flummoxed and appalled at our primitive methods…..but nothing beats the taste……and the easy cleanup……Last year we bought a huge cast iron tripod to hold pots over the fire…..we don’t use air conditioning so we are always looking for ways to keep cool the inside of our home…….Thanks Suzy for making us feel not quite as bizarre…..:)

      Yep, we’re hoping to buy a nice cast iron grate and maybe a tripod as well. We really enjoy cooking outside. I think our next challenge is going to be slow cooking a venison roast in a manner they use in Colombia for Carne Asada. We’ll see how it turns out.

    I use my BBQ year round. Mesquite charcoal wood is my fuel. The San Joaquin Valley has an Air Pollution Control District http://www.valleyair.org/. Residence need to check to make sure burning is allowed. However, if the fire is used for cooking food then the fire is allowed. The valley is a HUGE bowl that locks in air pollution from the bay area as well. The southern end can get very bad. So, yes, we have some peculiar rules about fire here. Now that it’s wildfire season, there are strict rules regarding campfires from the foothills all the way up into the Sierra Nevadas.

    Ham with a nice plum & port glaze is terrific.

    No open fire here….not even sure if there’s a city ordinance against it, but we don’t typically do something like that just because we don’t really have the set-up for it. Looks tasty, though!

    One of my favorite things is having campfire food when we are camping. I keep telling hubby that we should build a fire pit here at home so that we could enjoy fire cooking more often.

    Homemade mozzarella is super easy, y’all, I don’t even bother buying it any more.

    We can’t have open fires (I live in the suburbs) but I have a little bbq grill I cook on quite a bit in the summer and fall.

    I have not cooked over a fire much, just a couple times while camping. I do use a charcoal grill quite often though. Pretty much the same premise.

    Summertime is almost always bbq time, and that’s rare in england! I’ve always been the one “womaning” the bbq even though I know it’s some sort of male-territory ritual in other places. I just know how to cook, so it’s all about me.

    I cook weird stuff, however; nectarines drizzled with berry vinagrette are quite nice when grilled; satay prawns (though I won’t eat seafood now with the oilspill going on), and smoked turkey crown (takes ages but works great). This weekend it’s just me at home but I’ll probably fire up the barbie for a sedate dinner after strawberry picking.

      We love grilled peaches drizzled with caramel sauce or sometimes with balsamic vinegar. So good.

    We do have burn bans in effect most of the year in Seattle so we grill on the barbecue. Last weekend it rained cats and dogs so we pitched the tent in the basement and roasted our homemade marshmallows using the kitchen torch. Sadly not the camping experience I was hoping for but better than camping in torrential rain!
