Fresh Greens from the Garden

October 20th, 2010

I’ve been harvesting some of my fall planted veggies, mainly spinach and arugula. These two greens are my favorites, with arugula being my favorite of the two. If I had to choose only one green to eat the rest of my life it would be arugula.

There’s just something about it’s wonderful peppery complex flavor that I love. It works beautifully in salads, as a substitute for basil in pesto and it makes a marvelous BLT. No boring iceberg lettuce here at Chiot’s Run!

I like to grow heirloom arugula and collect seed from it each year to keep it going in the garden. Mine is the white blooming variety, I’ve grown the yellow blooming variety as well but I didn’t like it as much as this kind.

What’s your favorite garden green?

Oh we have had two lettuce varieties this year that have been amazing. Totally resistant to bugs, grew when we paid no attention to them, and were abundant and delicious. I think fall lettuce tastes the best :). Of course we saved seed from them so that we can use them again next year.

What is the difference in flavor between the yellow and white?

Tuscan kale is my favorite green so far.

I find that the white flowered seems to have a better peppery flavor. I couldn’t distinguish as much flavor in the yellow flowering variety that I grew. Since the strong peppery flavor is my favorite part of arugula, I want to grow the most flavorful variety I can.

I need to grow arugula next year. This is my first year to grow greens (kale, cabbage, 2 types of lettuce, as well as the greens from my beets). I am most excited about the cabbage, because I love cabbage and because I planted extra so I could make sauerkraut.

Love arugula but if I have to choose one then it will have to be dandelion. Nothing beats dandelion salad.

By the way Susy, have you ever tossed in some chopped walnuts in your arugula salad? The two nutty flavors go together beautifully.

Oh yes, we LOVE walnuts in salad. Currently we’re enjoying a cider dressing and we top the salads with a strong cheese & walnuts, sometimes some dried cherries.

I can never decide. I love, love kale, particularly the flatter varieties like red Russian and lacinato. And when I’m eating kale I think “this is my favorite green!” But then I eat Japanese mustard (I grow Japanese giant) and I think, “no this is my favorite!”. Same with tatsoi and arugula. Those 4 are tied for my favorites. I like spinach but I’d always choose one of the others for every recipe that calls for spinach. And compared to the brassicas, lettuces, while nice are just bland.

We just had a wonderful fresh lettuce salad with green pepper from my parent’s garden. I am visiting them in MN right now. My fall lettuce had just popped up when I left home. I know it will be beautiful when I return home. I look forward to seeing how much everything has grown when I get back. I REALLY look forward to harvesting and eating. It is fun to hear about the fun thingsyou did on your travels. Thanks for sharing. Emily

Love arugula, love kale, love cress but I’m digging the turnip greens right now. It’s so very fall to stew up some turnips, greens and ham hock.
