Friday Favorite: Sauerkraut

Eighteen pounds of sauerkraut, that’s how much I made 10 days ago. People keep asking me, “What are you going to do with all that?”. I’ll give a few jars away to friends, but we’ll eat most it. It will be on our plate every meal until it’s gone. The chiots will get some each morning as well. I must admit, I never thought I’d be listing sauerkraut on my Friday Favorites. Growing up my only experience with kraut was the stuff my grandma emptied out of bags on New Year’s Day. Then I discovered home made fermented kraut and liked it. After reading up on the health benefits and was amazed and liked it even more. Now that we try include it at every meal when we have it available I can say that I really, really like sauerkraut and love the health benefits it provides!

    Susy, kraut for breakfast, huh. Well, why not. I’m sad to say that my fermented food list is non existent. As I sat and thought about the foods that frequent my table, there was not one food item that was fermented. The your recipe in Eating Outside the Bag couldn’t be simpler. I don’t have those kraut memories that you have. I didn’t really like anything cabbage related until well on in life. I was a picky eater as a child that turned into I’ll eat anything at the age of about 30. Today my tastes for cabbage are unlimited but cooking for the others in the family that don’t like the taste of cabbage eliminates it from the menu most of the time. My exposure to cabbage now is through coleslaw and cabbage soup. I will have to consider expanding those options.

    I never liked it until I tasted some homemade and then I made some myself. Now I love it.

    Yes, yes, and yes!

    I am a huge fan of pickled, fermented, and oddly crafted items. I grew up eating things like pig’s feet and kimchi, then graduated to head cheese and other pickled organ meats while living in Germany. I can’t say my boyfriend is in the same boat, but at least I like living an interesting-gastric life.

    I have to ask Susy, where did you obtain those neat glass bowls?

    I love kraut.. but I dont like the bagged kind either. I prefer the canned if I have to choose between the two. I dont like kraut with caraway seed either. I like caraway seed, just not in my kraut.

    I’ve never made any though I’ve been thinking about it a lot this year.
    If I ever get a good crock to make it & pickles in, I’ll try it at least once. ;)

    I just made my first batch of kombucha and I love kefir. Those are the only two other fermented foods I’ve made. My grandma’s mustard pickles qualify as fermented, but I only half like them. ;)

    I LOVE it! Everyone in my house though, hates it. :-( I rarely get to eat it unless my mother makes it at her house, then I go over there for dinner. :-)

    …I’ve never had homemade sauerkraut but would love to try my hand at it. My grandma used to talk about making it, she would say how they would have a large covered crock outside the back door and they would have to skim the mold/scum off of it every so often, if I recall that correctly. (?)

    I love saurkraut, but I’ve never made it. Must think about that. I don’t know if I could enjoy it every meal though I am German and Irish. My German grandmother made many delicacies for us, but I don’t remember her making homemade kraut either.~~Dee
