Friday Favorite: Cashew Butter

Peanut butter has never really been one of my favorite things. As a kid, I didn’t really like PB&J’s – crazy, I know. I did eat a fair amount of peanut butter in college, as it was a convenient snack item. Perhaps part of the reason I never liked it is because it has a tendency to give me indigestion. When I eat peanut butter I burp it up for the next couple hours – not pleasant! I’ve never tried other nut butters as they can be rather pricey.
Cashew Butter
Earlier this week I decided to try turning my favorite nut into butter – the cashew. I used soaked nuts, which I find easier to digest (see the Nourishing Traditions cookbook for information on soaking cashews). Since I only have a blender, I added a little coconut oil to the cashews and blended it into a lovely butter. I have to admit, this stuff is GREAT. So much better than peanut butter. I don’t think I’ll ever eat peanut butter again!

    Sun Butter – yummy stuff made from sunflower seeds. But what I really love is the Sun Butter Cups. Better than a Reese’s Peanut Butter Cup. Heavenly!

    i love peanuts……….and all things peanut. but growing up with cashew trees all around created a love for cashew that tops my love for peanuts. of course, i did not hear of cashew butter, instead we collected the nuts, dried them and then they were roasted in an open fire under a mongo tree.
    years later i was introduced to organic cashew butter and a whole new world opened up to me. i made raw cashew balls rolled in shredded coconut, banana/mango/ cashew ice cream, added it to my smoothies, ate it from a spoon, and enjoyed it on a slice or two of homemade bread.
    this cashew season i have collected my nuts, and drying them. my aim is to make some cashew butter…………mango/banana/cashew ice cream is yelling my name.

    Susy, peanut butter rules in my house. It’s probably because like you say the other nut butters are expensive when they can be found in the big box stores. I do like cashews but have never tried them in butter.

    What kind of process do you use to make nut butter or do you have it done some where?

    Susy, I have the same problem w/ peanut butter. I love it but…..sometimes it’s just not worth it. I have had almond and cashew from the store but so expensive. Making my own nut butter would be worth it. Thanks for the idea!

    I make pecan butter with the pecans from my parents yard. It’s really good! I love cashews too but they are so pricey that I consider them treats.

    I have made and like almond butter but I don’t seem to have a problem with peanut butter….thankfully…..because I really like it!

    I love peanut butter the most. I could probably eat a pb&j everyday (with a nice glass of cold milk) and be happy with it. I’ve tried storebought almond butter before, and didn’t like it, way too dry for me. Maybe homemade would be better.

    Try blending some honey (or maybe maple syrup) with your cashew butter. I’ve had peanut butter/honey spread, and it was awesome.

      Try a couple drops of oil mixed into too dry almond butter. I’ve used olive or whatever else I have on hand. It doesn’t take much for a small jar and the oil doesn’t impart any odd flavor.

    My husband can’t do peanuts, so we buy natural almond butter for him and I eat the natural peanut butter. Almond butter is becoming easier to find around here and that’s bringing the price into not-gasping-in-horror dollar territory but the price still evokes winces. I doubt it’ll ever be as cheap at peanut butter, but it’s a good alternative. We’ve discussed making it for him but haven’t tried that yet. He’s not much into other nuts though sunflower seeds are starting to grow on him. Might try that next.

    I do not like peanut butter, so I buy almond butter. I love cashews so I keep those on hand for an easy snack.

    I often get almond and/or cashew butter from the COOP. A butter and jelly sandwich on multigrain bread with a glass of whole raw Jersey milk is just the best lunch.
