Friday Favorite: New Meals
It’s always great to discover a new meal that you love. A few weeks ago I made sourdough naan for a party. The next morning, while making breakfast, I spotted them in a container and tried to think of how to incorporate them into my breakfast. I was in the process of scrambling eggs, which are on the menu most mornings. I remembered the cheddar cheese and pickled jalapeños in the fridge, spotted an avocado on the counter along with a red onion nearby and remembered the cilantro that had been chopped to top soup the night before.
I made a batch of guacamole, fried up the onion and then put it all in the naan. It was delicious and now it’s one of Mr Chiot’s favorite breakfasts. Discovering a new way to eat something you every day is always great. I’m looking forward to enjoying this in the summer with garden fresh tomatoes on top!

I made a meatloaf a few days ago with a combination of breakfast sausage, ground beef, and rice, topped with apple chutney. I was trying to find a way to use the extremely over-salted breakfast sausage that came with the pig we bought (not sure if it’s always that salty or if someone screwed up at the farm, but it’s almost inedible by itself). It sounds really weird, but every single member of the family ate impressive amounts of it, including and especially the not-yet-two-year-old. And we could eat the sausage without sodium overload. Win.

I love scrambled eggs in wraps of any kind! One of the yummy things I do is press a garlic clove into some cream cheese and spread that on the wrap. Fry up some peppers, onion, potato, w/ the eggs. The best part is it’s portable!!!

Susy, as you well know, I’m not real creative when it comes to cooking. I am using more tortillas in my meals. I know it’s not a home made sour dough naan but it’s a step in the right direction for me. Breaking away from the Midwest traditional farm meals after 50 some years is going to take awhile.
Hey, by the way, I popped the top on a pint of the tomato soup that I canned by using your recipe from last August. Totally, awesome. I’m making more this year.

If sandwiches for breakfast count! And I’m not talking about breakfast sandwiches. ;) My palette is starting to widen again, but a lot of things have been limited. I miss breakfast tacos and the like….your photo looks delicious but I’d probably turn my nose up at it when I smelled it!

Mmmmmm, so many good things together.
I recently paired our homemade pesto with our homemade gravy (tomato sauce) on angel hair pasta. I had never combined both sauces together, and it was divine! Love new discoveries!

I was given this recipe by a couple of Jewish friends and it is delicious…an avocado….a couple of hard boiled eggs….mayo…salt n pepper to taste…..mix all until extremely smooth and spread on homemade breads….or can be used as a dip for veg.
