Summer Broccoli Salad

On Sunday my harvest basket was flush with broccoli. Since we have loads of bacon in the freezer to eat up, I settled on making broccoli salad for quick lunches this week. I pulled dried cranberries from a local farm from the pantry, along with pecans sent to me by a generous blog reader. I grabbed a large egg from the chicken coop and olive oil purchased from Chaffin Family Orchard from the pantry and whipped up a batch of mayonnaise for the dressing.

For the dressing I mixed homemade mayo, local honey, and homemade yogurt. Then I added the broccoli, crumbled bacon, diced red onions from the garden along with pecans and cranberries. After seasoning with salt & pepper our lunches were ready for the week. Quick, healthy and delicious, a cold salad like this on a hot day is perfect.

    Broccoli salad is one of my favorite salads. I now make it with olive oil, honey and cider vinegar, but any way it is made it’s still the best!

    I had a salad just like this at a locally run restaurant and it was scrumptious! Bacon, red onions and pecans really do make a salad!

    On a hot day, I still enjoy hot meals, ironic, but true. We also love a good smoothie crammed with spinach, sometimes even use them as a meal if peanut butter is added.

    Susy, the temps here are back down to 80s during the day and upper 60s at night. That’s not exactly summer weather here but every one is enjoying it. My hot weather meal would have to be some kind of meat sandwich with chips. Totally not home grown but then I never have claimed to be a garden fresh kind of guy. However, on the locally home grown side, the sweet corn is starting to show up at the vegetable stands dotted across the city. I try not to think about what chemicals they have been dowsed with. Just because they are bought at a roadside stand or farmer’s market doesn’t mean they are organic but just locally grown. I’ve never went on a hunt to seek out organic growers in my area and probably should do that but not today.

    Today is my cousin’s tree branch day. I and another cousin will make an attempt at cutting up a fallen tree branch in her back yard. Not a big issue, right. Well this one is good size and broken off, standing on end, wedged up against another tree, and, oh yeah, ready to fall about four feet into a creek. My cousin likes to challenge my abilities. It’s a great day to be alive, don’t you think?

      I found a recipe online for a cooked mayo (I have young children, so I prefer to not feed them raw eggs). It was a hit with my husband! There really wasn’t any left for my kids!
