Savory Egg Muffins

Finding ways to make breakfast both quick and healthy can be a challenge. Around here, eggs are on the menu pretty much every day. I love making baked egg cocottes, but that’s a little time consuming for a weekday morning. This is where savory egg muffins come in, they’re full of healthy eggs and vegetables, you can even throw in ham, bacon, sausage, beans or another form of protein if you want more. Lately mine have been just eggs and vegetables.

They’re so simple: whisk 8 eggs in a large bowl, add 3 cups of diced vegetables or protein of your choice, stir, pour into greased muffin tin and bake at 350 for 15-20 minutes. I like to lightly cook my vegetables first, but that’s not necessary. You can also mix in cheese, chopped herbs, and other goodies. Earlier this week ours were filled with: onions, peppers, zucchini, parsley and parmesan cheese. They’re good hot out of the oven or even room temperature later that day.

    Susy, my favorite quick breakfast would have to be oatmeal. I cook it in the microwave then add honey and a sliced banana. The list of things and seasonings that can be added to oatmeal is endless. The next quick breakfast would be scrambled eggs in a tortilla with salsa and cheese. When Bradley was still here, Saturdays were the days of breaking out the cast iron skillet and making bacon and eggs for breakfast. My favorite breakfast would be fried country potatoes and eggs. Speaking of potatoes. The harvest has begun. I really forgot how wonderful home grown potatoes tasted. They are magnificent. The little bite sized ones are the best just boiled whole in a little sea salt water and eaten with a little butter on them.

    These look absolutely delightful! Perfect timing too, as we are trying something new with homeschooling this year, which requires us to be a morning class by 9 am once a week. And we are not morning people. Quick question: i presume the egg rises a bit, so how full would you fill the tin? 3/4ths of the way too much?

    I wouldn’t say “quick” breakfast is a favourite of ours, but so far when we have to be out the door in the mornings, we make peanut butter and banana sammies or we have muffins and chopped fruit from the day before. Is that cheating because all the work was done the day before? :) We prefer our slow breakfast mornings with nut meal pancakes or stratas or quiche.
