Savory Sage

November 13th, 2014

All summer and fall you’ll find various herbs drying on my sunny back porch or in my oven. Right now I have an oven full of sage leaves drying for Thanksgiving and delicious winter soups.

Throughout the summer I eat the young tender leaves fried in butter. Not only do I get a delicious snack, but then I have sage brown butter to drizzle over pasta or soup.

Sage is probably one of my favorite herbs, particularly in winter. It pairs so well with winter squash, pork, and other poultry. And who can resist savory sage stuffing at Thanksgiving with lots of onions and celery?

    One of the things I need to do today is cut a bunch of sage and dry it. I want to try mixing it with baking soda to brush my teeth. I read that sage is good for tender gums, which is a problem I’ve been having lately.

    Susy, I don’t have a favorite herb. I’ve always had trouble knowing what herbs to use with what meat and vegetables. I have found out over the course of my cooking experiences that the art of cooking is all in the seasonings. I’ve not really ventured out in the world of seasoning beyond Mrs. Dash and garlic powder. Now that I have the garden space, I really should research the world of herbs more.

    I love sage, but my husband has a low tolerance level for it so I have to go easy. Here is my favorite winter use for rosemary….I put a nice sprig of rosemary, about half a lemon, sliced up, and a good splash of vanilla in some water and simmer it on the stove. Incredible! I baked fish for dinner last night and followed up with the rosemary potpourri to eliminate any lingering odors. It’s supposed to smell like a Williams Sonoma store does. Perhaps. All I know is, it pleases me no end!

    We use a lot of rosemary – rosemary salt sprinkled on potatoes, fresh rosemary pieces grilled in our steak – Yum! Now I plan to try Tonya’s recipe for potpourri.

    Tonya- thanks for the idea! I have so much sage dried and am trying to find creative uses for it (my husband prefers it minimally also)… I use it in tea almost each day.
