Friday Favorite: Homemade Pizza

Mr Chiots loves pizza. There aren’t a ton of place that are close and convenient so we sometimes make our own. Last night I finally had time to make eight, one to eat and seven for the freezer. Now we have quick meals this summer that will pair perfectly with a salad.

I used this sourdough pizza crust recipe and it turned out very well, definitely a dough I’ll be making over and over again! They were topped with fresh mushrooms, red onions from the garden, kalamata olives, and Italian sausage from our pigs. Perfectly delicious.

What’s your favorite pizza topping?

    The number one best thing about starting to make sourdough (which my husband and mother-in-law, who get sick on regular wheat bread, can eat) is being able to make pizza again. I can’t even eat pizza at restaurants anymore–too salty. Plus, I love mushrooms on pizza, and most of the time the restaurants used canned mushrooms, which are gross.

    So pretty much I only eat pizza when I make it now. As with so much else. :-)

      Do you bake the pizza before you freeze or freeze it uncooked?

        I bake, but not fully, then freeze.

    My favorites are arugula or basil (not together!) along with whatever other vegetables I have handy. Always onions from my garden, usually some home-grown garlic, tomatoes, whatever I have on hand.

    Arugula gives the pizza a really nice bite, while basil makes everything taste great!

      They do very well, I think part of it is in the reheating technique, I always do it in a cast iron skillet.

    Susy, oh, yeah, pizza. I like any kind of pizza. When my wife was alive we ate onion and green pepper pizza but now that she’s gone, I have gravitated to a little more meat on the pizzas …. Ok a lot more meat. :-) My favorite pizza is one that has every thing on it. It’s probably not the best thing for me to eat and I don’t really have it too often and never home made. I have eaten home made before and it was indeed much better than the ready made ones.

    Have a great pizza eating experiences for seven more days in the future.

    My husband is a serious pizza lover. We tried making dough but weren’t especially satisfied… our Earth Fare grocery has a great dough, so we pick that up usually. I am curious about freezing them after making them…would you share that process?

    My toppings are fresh garlic & spinach with plenty of cheese!

    I too would love to hear about how you freeze the pizzas. I make pizza every Friday for my family, but it would be SO nice to prepare some ahead of time.

      Just google “Making Sourdough Starter” and follow directions you find, making your own starter takes a few weeks, but it’s really easy.

    If I lived as close to Belfast as you do, I’d be enjoying an Alexis pizza regularly. With that said, yours looks really yummy and you don’t have to drive anywhere.
