Bushels of Beans

Remember that second batch of green beans I seeded back in mid July? They all came ripe. I harvested a nice batch before we left for our trip at the beginning on Sept, when I returned they were flush with beans!

I harvested half a bushel on Friday night and half bushel on Saturday night. Then I blanched them and put them in the freezer. I like to freeze them on cookie sheets then dump them into zipper bags so I can scoop out what I need for a meal. It’s a convenient way to preserve them. These are ‘Maxibel Haricort Vert’ from High Mowing Seeds.

I also like them blanched so I can make this cold green bean salad with them. It’s a great way to taste summer in the middle of winter when you have the need for it.

    Awesome–those are gorgeous! Unfortunately the slugs got all but about 7 of our second planting of green beans, but we’ve gotten several nice harvests from them. The two cucumber plants planted at the same time have been the real champs–20+ cukes and still going strong!

    Susy, I’m going for dry beans this year. I had one flush earlier this year and gave them away. I don’t have a big freezer and really didn’t want to can them so now I will be harvesting the beans and letting them dry for soup this winter. I’ll probably end up with minestrone or hamburger soup. Maybe some chili. I have the tomatoes stored away and with beans I’ll just go from there.

    Wow… I’m more impressed by the strawberry plants in the photo. I can’t seem to find a place for mine that they don’t get dried and crispy by July. Not to mention keeping the chickens from eating them.

    I’ll have to make a note of that variety of bean. I grow Kentucky Wonders but if I wait too long to pick them they get thick and tough.

    I used to blanch and freeze my green beans, but found I really like them pressure canned. I know that basically makes them the same consistency as commercial canned green beans, but I like them that way!

      Kathy, I found that true with me as well. I just liked the taste of pressure canned beans over frozen.
