Is there anything more perfect than a BLT in summer? A small amount of meat and a lot of vegetables from the garden. I love to add slices of onion to my BLT, and thick slices of heirloom beefsteak tomatoes. In my mind, it’s the perfect meal for a late summer day, especially for breakfast!

    We are loving tomato sandwiches. One variation that I have to suggest is mix two parts basil pesto to one part mayo, spread on a chiabatta bun, top with sliced tomatoes, mozzarella cheese, a few spinach leaves, sprinkle with crispy onions. Heat in a panini press (or a hot oven with a heavy pan on top). A restaurant at my work makes these, and I treat myself at least once a week. We’ve managed to replicate them fairly well at home, and they’re delicious–a great way to enjoy fresh homegrown tomatoes.

    Susy, Mmmmm, yum. BLT is good and time. I like the idea of onion on the BLT. My meat consumption has been reduced to almost a seasoning of the soup or dish that is being prepared. Rarely do I just eat a steak or roast.

    Have a great BLTO (Bacon, Lettuce, Tomato, Onion) day.

    I love BLT season! My husband is a purist- Only B.L.T with mayo. I add whatever else I am in the mood for- always onion, and a little dijon. Bon Appetit!
